Sizzling Summer Menu

Day 1: Kansas City Barbecued Chicken with Classic American Potato Salad
*This is the best BBQ chicken I have every had!  The rub, the homemade sauce, the indirect heat grilling come together for a BBQ that will knock your flip-flops off.
*I used a small, disposable aluminum pan from the Dollar Store for the water in the grill recipe
*You will want to make extra chicken for lunches, picnics, etc-everyone loves BBQ chicken!
*Potato salad can be made ahead of time and refrigerated until you need it.


Day 2: Cheddar BLT Burgers w/ Russian Tarragon Dressing, served with coleslaw or leftover potato salad from Day 1
*To lighten recipe, use turkey bacon and reduced-fat cheese


Day 3: Asian-Inspired Crispy Fish Tacos with Asian Snap Pea Salad with Sesame-Orange Dressing
*This Fish Taco recipe is to-die-for!  Really great flavor combo and crispy texture.
*To lighten the recipe, fry fish in a few tablespoons of fat-burning coconut oil 


Day 4: Spanish Spaghetti with Olives, served with Peach, Mozzarella, and Basil Salad
*Quick meal using premade marinara sauce -  I like the taste of Bertolli brand marinara best for the price
*To lighten, use ground turkey and to increase nutrition, use whole grain pasta


Day 5: Grilled Trout BLT, served with sauteed seasonal veggies
*Use any type of whitefish instead of trout - I have used flounder and cod
*If trying to grill fish sounds like a hassle, simply pan sear it instead.
