International Summer Menu

 Day 1: Pesto Caesar Salad 
*Top with sliced, grilled  chicken breast or rotisserie to create a main course salad
* I did not have pre-made pesto on-hand.  For pesto, I substituted 4 T fresh basil + small clove garlic + 2 T Extra-virgin olive oil + pinch of salt  and just tossed it in the food processor with the other dressing ingredients.  Came out great!  This is an excellent Caesar dressing and well-worth the 5 minutes it takes to make.
* May substitute pre-made croutons to save time

Day 2: Tuscan Cod with Basil Risotto

Day 3:  Peanut Chicken Soba Salad with Minted Cucumbers
This salad is absolutely awesome!  I used cashews instead of peanuts.

Day 4: Greek-Style Burgers with Feta Aioli
*Try ground turkey

Day 5: Tuna Nicoise Sandwich

Day 6:  Grilled Pork Chops with Spice Paste with French Potato Salad
*reduce salt called in Pork Chops to 1-2 tsp
